Ingredients:
2 Tsp Cumin powder
1 Tbsp Oregano
2 Tbsp Salt
1 Tbsp Pepper
1 qtr cup Fresh - chopped Cilantro
1 half finely chopped red onion
1 half finely chopped white onion
2 cloves finely chopped garlic
4 cups chicken or vegetable stock
6 Tbsp extra virgin olive oil
1 fresh - jalapeno
8 yellow corn tortillas
1 Tbsp red pepper flakes
2 fresh Avocados
2 fresh Limes

Steps:
In a medium/large pot heat olive oil with onions and garlic
stirring occasionally until the onions become translucent then add the jalapeno,
cilantro and seasonings. Mix well and then add your stock, bring to a quick boil
warm the tortillas on a skillet, do not use non-stick spray or any type of grease
cut them in 2" strips bring heat down to low and add strips < DO NOT STIR ! >
Take an extra couple of tortillas, brush them with olive oil, cut them into strips
and bake until crisp and garnish soup.
Cut Avocado into 8 slices and add to bowl
Cut a lime into wedges and squeeze over soup for added flavor.
